The visit, in detail
You put your name on the waitlist through the Din Tai Fung app while you are still parking, walk through Bellevue Square to Lincoln Square, and the smell hits before the host stand does — ginger, black vinegar, warm dough. The wait area faces the glass wall of the open kitchen; use the wait to watch the dumpling team fold. Once seated, order in a lineup: two orders of pork XLB to start, one order of shrimp-and-pork, wontons in spicy chili oil, green beans with garlic, cucumber salad, and the shrimp-and-pork sticky rice. Ask for extra ginger. For first-timers, ask the server to demonstrate the spoon-and-vinegar method — spoon under the dumpling, small hole to release the soup into the spoon, drink the broth before the dumpling. Kids handle the pork XLB well; the fried rice and noodles are the easiest bridge for a picky eater. Service is quick — a two-top can be seated, fed, and walking through Bellevue Square within an hour if you order the moment the server arrives.
