About

About Sushi Kashiba

Sushi Kashiba is the Bellevue extension of Chef Shiro Kashiba's legacy — the Seattle sushi master who trained under Jiro Ono and helped define Pacific Northwest sushi. Reserve the omakase counter and let the itamae guide the meal course by course; there is no better sushi experience on the Eastside.

Highlights

What makes it special

  • Chef Shiro Kashiba lineage — trained under Jiro Ono
  • Omakase counter with 20 seats and an itamae guiding each course
  • Aged nigiri, Hokkaido uni in season, and local Puget Sound fish

What you'll experience

The visit, in detail

Twenty seats at a cypress counter, an itamae working directly in front of you, and a procession of nigiri that moves from delicate to rich over 90 minutes. Expect Hokkaido uni in season, aged bluefin, and pieces of local Puget Sound fish you won't find elsewhere. The sake pairing is worth the upgrade.

Best time

When to visit

evening

Book the omakase counter — first seating 5:30 pm, second seating 8 pm; reserve four weeks out.

Practical

Know before you go

Omakase is the way — the a-la-carte side is fine but the counter is why you come. Dress smart-casual. Valet at Lincoln Square; validate at the host.
