Order the tajarin al ragu — thousand-strand egg-yolk pasta with a Piedmontese meat sauce that's been on the menu since day one — then work through the plin, a seasonal secondi, and a Barbera from the Italian-heavy wine list. Portions are generous; four courses for two is plenty.
